Started in 2011 out of their passion for organic farming and fermentation, husband and wife team, Scott Heath and Ellen Cavalli run Tilted Shed Ciderworks where they produce specialty ciders from their heirloom apple orchard in West Sonoma County. Tilted Shed has earned a national reputation for producing authentic ciders with a non interventionalist approach to cidermaking that is meant to highlight what the apple can do in the glass. Tilted Shed is doing things a little differently, and attracting a following of cider aficionados in the process.
Their Windsor Story:
When Scott and Ellen decided to expand production from their kitchen and farm, they began looking for a facility that made financial sense for their small but growing niche cider business. They looked at a number of options up and down the 101 corridor but when they saw the space along Bell Road, they felt it was a perfect fit both for their space requirements and budget. And when the Town stepped in, easing the permitting and other start up processes, it became even clearer that this was the right environment in which to expand their business.
“Working with the Town of Windsor to get our facility ready and getting the permitting done has been a piece of cake, ” said Ellen. “We are the first cidery to come to Windsor. They did their homework, listened and learned about our business. Getting started went much smoother than we ever thought it would go and we were up and ready to do business in no time.”
